1. Watermelon, Feta, and Mint Salad

Ingredients

  • 4 cups cubed watermelon 
  • 1/2 cup crumbled feta cheese 
  • 1/4 cup fresh mint leaves, chopped 
  • 2 tablespoons extra virgin olive oil 
  • 1 tablespoon balsamic vinegar 
  • Salt and pepper to taste 

Instructions

  1. In a large bowl, combine the watermelon, feta cheese, and chopped mint leaves. 
  2. Drizzle the olive oil and balsamic vinegar over the salad. 
  3. Season with salt and pepper to taste. 
  4. Toss gently to combine. 
  5. Serve immediately, or chill in the refrigerator until ready to serve.

2. Grilled Lemon Herb Chicken

Ingredients

  • 4 boneless, skinless chicken breasts 
  • 2 tablespoons olive oil 
  • 2 cloves garlic, minced 
  • Zest and juice of 1 lemon 
  • 1 teaspoon dried oregano 
  • 1 teaspoon dried thyme 
  • Salt and pepper to taste 
  • Lemon wedges for serving 

Instructions

  1. Preheat your grill to medium-high heat. 
  2. In a small bowl, whisk together the olive oil, minced garlic, lemon zest, lemon juice, oregano, thyme, salt, and pepper. 
  3. Place the chicken breasts in a shallow dish and pour the marinade over them. Turn to coat evenly. (Option: cut up the chicken into squares to make chicken skewers!) 
  4. Grill the chicken breasts for 6-7 minutes per side, or until they are cooked to 165F degrees and no longer pink in the center. 
  5. Remove from the grill and let rest for 5 minutes before serving. 
  6. Serve with lemon wedges on the side.

3. Chilled Cucumber Avocado Soup

Ingredients

  • 2 large cucumbers, peeled and chopped 
  • 1 ripe avocado, peeled and pitted 
  • 1 cup plain Greek yogurt 
  • 1/4 cup fresh cilantro leaves 
  • 2 tablespoons fresh lime juice 
  • 1 clove garlic, minced 
  • 1/2 teaspoon ground cumin 
  • Salt and pepper to taste 
  • Sliced cucumber, cherry tomatoes, and cilantro leaves for garnish (optional) 

Instructions

  1. In a blender, combine the chopped cucumbers, avocado, Greek yogurt, cilantro leaves, lime juice, minced garlic, cumin, salt, and pepper. 
  2. Blend until smooth and creamy. 
  3. Taste and adjust seasoning if needed. 
  4. If the soup is too thick, you can thin it out with a little water. 
  5. Transfer the soup to a bowl and cover. 
  6. Chill in the refrigerator for at least 1 hour before serving. 
  7. Serve cold, garnished with sliced cucumber, halved cherry tomatoes, and fresh cilantro leaves, if desired.

4. Air Fryer Crispy Chicken Tenders

Ingredients

  • 1 lb chicken tenders 
  • 1/2 cup breadcrumbs 
  • 1/2 cup grated Parmesan cheese 
  • 1 tsp garlic powder 
  • 1/2 tsp salt 
  • 2 eggs 
  • Cooking spray or a light drizzle of olive oil 

 Instructions

  1. Preheat your air fryer to 375°F (190°C) for about 5 minutes. 
  2. Prepare the coating in a shallow bowl by mixing the breadcrumbs, Parmesan cheese, garlic powder, and salt. 
  3. In another shallow bowl, beat the eggs to prepare the egg wash. aste and adjust seasoning if needed. 
  4. Dip each chicken tender in the egg wash, letting any excess drip off, then coat it with the breadcrumb mixture. If the soup is too thick, you can thin it out with a little water.
